Bacon and Vegetable Risotto

  1. 2 cups long grain rice
  2. 5 rashers bacon, sliced into strips
  3. 1 medium onion diced
  4. 3 cups frozen vegetables
  5. 3 teaspoons chicken stock powder
  6. 3 tablespoons margarine

  1. In a small pot add chicken stock powder to 2 litres of water and bring to a mild simmer.
  2. In a large pan place the margarine and onions and cook for 3 minutes.
  3. Add rice to the margarine onion mix for 5 minutes on a medium heat, ensuring all the rice is lightly toasted.
  4. Add the bacon strips.
  5. Slowly add a ladle at a time of the hot chicken stock.
  6. Stir through and almost let the mix dry out before adding the next ladle of stock.
  7. Continue this process of stirring and adding hot stock until the rice is almost cooked and has a creamy appearance.
  8. Add vegies and stir through until cooked.
  9. Serve and enjoy.
