  1. 1 chicken breast, diced
  2. 2 medium onions, diced
  3. 3 cups frozen vegetables
  4. 3 eggs
  5. 2 tablespoons soy sauce
  6. 2 cups rice
  7. 1 rasher bacon
  8. 3 cloves garlic, finely diced
  9. 2 teaspoons crushed ginger
  10. 4 tablespoons canola oil

Instructions
  1. Cook of rice and place in the fridge on a tray to cool and dry off.
  2. Crack eggs, slightly mix and cook off in a pan as a flat omelette, chop and set aside.
  3. In a large pan heat oil, add bacon and onion, garlic, ginger and chicken. Cook off until slightly golden.
  4. Add rice and continue cooking for 8 to 10 minutes.
  5. Add defrosted veggies and egg pieces, cook through.
  6. Add soy sauce and stir through.
  7. Serve and enjoy.
