Bread Sauce

Bread Sauce (served with meat or roast meals)
  1. 4 whole cloves
  2. 1 Brown Onion
  3. 600ml Milk
  4. 1 Bay Leaf
  5. 3 sprigs of Thyme
  6. 6 Crushed Black Peppercorns
  7. 1 ¼ cups of Fresh Breadcrumbs (made from day old bread)
  8. ⅓ cup of thickened cream
  9. Salt and Pepper to taste
  1. Press the cloves into the onion.
  2. Place onion, milk, bay leaf, thyme and peppercorns in a small saucepan over medium-high heat for 4 minutes or until gently simmering.
  3. Set aside for 20 minutes to develop the flavours.
  4. Strain milk mixture through a fine sieve into a clean saucepan.
  5. Discard onion, bay leaf, thyme and peppercorns.
  6. Add breadcrumbs to milk and stir to combine.
  7. Cook over medium-low heat, stirring, for 5-7 minutes or until sauce thickens slightly.
  8. Remove from heat and stir in the cream.
  9. Taste and season with salt and pepper.
  10. Transfer to a heatproof jug and serve immediately.
