1. 1 French Stick - cut into thick slices ( Cob Loaf,Turkish Bread, Sour Dour, Wholemeal or any other bread variety may used)
  2. 6 large ripe tomatoes (diced)
  3. 2-4 cloves of garlic (crushed)
  4. ½ teaspoon salt (optional)
  5. 2 tablespoons of chopped fresh Basil
  6. 1 tablespoon of Olive Oil
  1. Combine tomatoes, garlic, (salt if required) basil and olive oil in a bowl.
  2. Toast slices of bread until golden.
  3. Top toasted slices of bread with tomato mixture and serve immediately.
  1. Nice as an appetiser or a snack on its own.
